Grafton, Vermont is one of the 10 most beautiful places in America according to USA Weekends, and since early 2006, David Smith has served as Head Chef at the Old Tavern at Grafton. Built in 1801, the Tavern has welcomed an impressive list of distinguished guests… from Paul Newman and Joanne Woodward to Ulysses S. Grant, Oliver Wendell Holmes, Henry David Thoreau, Rudyard Kipling, Nathaniel Hawthorne, Theodore Roosevelt, Woodrow Wilson, Daniel Webster, Ralph Waldo Emerson… well, you get the picture. If you’re a chef at this place, you have to know your stuff! So we are in for a treat tonight as Chef David Smith gives us a taste of inspired American cuisine… the hallmark of the Old Tavern.
One thing I love about David is that he is a member of the Vermont Fresh Network. As a member of the Chef’s Collaborative, David and his entire team endorse and promote the incorporation of seasonal, locally grown food for its exceptional flavor and unsurpassed quality! His goal is to provide food that "explodes with flavor!"
